Blender Whole Wheat Pancakes

All you need is a blender, to make these 'fresh ground' whole wheat treats!

Blender Whole Wheat Pancakes

1 cup Whole Wheat Berries (kernals/grain...same thing)
1 1/4 cup water

Put in Blender on high speed and mix for about 2 1/2 to 3 minutes. Stop Blender and add:

1 egg
1-2 Tablespoons Honey or Rapadura sugar (can use white if you only have that)
1/4 teaspoon sea salt
2 Tablespoons favorite cooking oil or softened butter
1/4 cup milk
1/8 teaspoon ground cinnamon (optional)

Blend for about 20 more seconds, stop and add:

1 Tablespoon Fresh Baking Powder

Pulse blender to just mix it in. Let mixture stand about 1 minute.

Have a cast iron skillet lightly greased and heated to medium low, or use favorite pan or griddle. Cook these pancakes on a slightly lower setting than you would a 'white flour' pancake. Pour out about 1/4 cup batter, let cook until you see bubble appearing, flip, and cook for about 1 minute more. It may take a few times to get it just perfect, but they are really good! They are great plain, but good with maple syrup or a little powdered sugar.

I am thinking that this sounds like a lot of trouble for pancakes! ;-) But, they do sound healthy...and even pretty good. I am sure it is the cinnamon that makes them yummy!!! :-) Hmmmm, I don't even own a blender anymore....I burned mine up years ago trying to make crushed ice! And I have never bought or even seen a "whole wheat berry"...or know where to buy them! LOL....I must be pretty useless! :-) Anyway...thanks for sharing!

hahaha, no not useless at all, stores don't really carry them, although some krogers do now in their healthfood sections. Wheat berries are really inexpensive even the organic variety, and it is very healthy. The main thing I like about sprouted flour, or fresh ground flour like this is because after just half an hour after grinding wheat or anyother grain into flour 75% of its nutriants including enzymes, vitamins, and minerals, are completely oxidized, and just after an hour 100% are gone. Thats why you see the preground ones say "fortified" but they are never able to get the bioavailable minerals or enzymes back in them.

Ron, I like the addition of honey and cinnamon. That sounds good.

Is there any difference in the way you would use sea salt instead of regular salt? I have some sea salt but I'm not sure how to use it in baking although I do sprinkle it in rice and veggies.

Hi Aida, no there is no difference at all, the only thing is that the sea salt is not iodized and comes from a natural source loaded with minerals. The only better salt out there is "celtic sea salt" which is basically the salt used in the bible days. Its salt that comes from ancient ocean beds, many believe that these were oceans before continental drift and land mass uprising, where I'm not completely opposed to a certain amount of continental drift, I think oceans were displaced because of a certain flood lol. Anyway, all that to say, its salt, use it like you would anyother. :-) Miss seeing you Aida, I feel like I've been a stranger lol
